  • 1 pickled mustard tuber (zhacai)
  • ½ oyster sauce
  • ½ light soy sauce
  • 1 cornstarch
  • a pinch sugar
  • 1 peanut oil
  • 1 scallions
  • 1 ginger

Instructions

  1. Slice the beef thinly. (Having the butcher slice it works, but machine-sliced pieces may go against the grain and end up a bit thicker than ideal.)
  2. Add a tablespoon of water to the beef and mix well to help absorb the marinade. Then add cornstarch, oyster sauce, light soy sauce, and a pinch of sugar — mix until evenly coated. Finally, drizzle in peanut oil, mix again, and marinate for 10 minutes.
  3. Top with julienned ginger and pickled mustard tuber, and mix gently.
  4. Once the steamer water is boiling, steam for 4 minutes.
  5. Garnish with scallions and serve — the beef comes out tender and silky with the savory aroma of pickled mustard tuber.
