Use the remaining oil in the wok to stir-fry the chicken offal, splashing in a ring of Shaoxing wine. (Add more oil if needed after frying the eggs.)

Stir-fry the chicken offal until the moisture evaporates. (My son likes the intestines crispy, so I stir-fry them a bit longer at this stage.) Add minced ginger, minced garlic, and the peppers. Stir-fry until well combined.


Add soy sauce for color. Toss in the garlic scapes and MSG, stir-fry briefly, and serve.
