A delicious Stir-fried Pork with Chili Peppers recipe.

Prep the vegetables: slice the chili peppers diagonally and cut the ginger into julienne strips.



Slice the pork into strips. Add 1 tbsp light soy sauce, ½ tbsp dark soy sauce, white pepper, thirteen-spice powder, cornstarch, and egg white. Mix well and marinate for 30 minutes.

Heat oil in a wok. Once hot, add the marinated pork. For the best chili pork, use plenty of oil!

Stir-fry the pork until about 70% cooked through, then remove and set aside.

Heat fresh oil in the wok over high heat. Add the julienned ginger and chili peppers. Add 2 tbsp light soy sauce and a pinch of MSG.

Quickly return the pork to the wok, toss everything together rapidly, and serve immediately.
