  1. Wash the Chinese chives thoroughly and cut into 3-4cm lengths.
  2. Crack the eggs into a bowl, add a pinch of salt, and beat well.
  3. Heat oil in a wok over medium-high heat, pour in the beaten eggs, and scramble until just set. Remove and set aside.
  4. Add a little more oil to the wok, toss in the chives, and stir-fry over high heat for about 30 seconds until just wilted.
  5. Return the scrambled eggs to the wok, season with salt and MSG to taste, toss everything together, and serve immediately.
