  1. Finely chop the mint leaves, scallions, garlic, and canned dace with black beans. Add light soy sauce and sugar, then mix well to make the sauce.
  2. Bring a pot of water to a boil. Drop in the cleaned squid and blanch briefly, then remove immediately.
  3. Heat a pan with oil over high heat. Add the squid and sear both sides.
  4. Spread the prepared sauce over the squid and continue cooking.
  5. Cook until the sauce coats the squid evenly and slightly reduces. Done!
