A delicious Braised Beef with Tomatoes recipe.
Blanch the beef in boiling water. For fresh beef, no additional seasonings are needed; if the beef has a slight gamey smell, add some cooking wine.
Heat oil in a wok, add scallions and ginger and fry until fragrant. Add star anise and beef, a splash of light soy sauce and oyster sauce, and stir-fry for 2 minutes until the moisture from the beef has cooked out.
Add the diced tomatoes (a little tomato paste can be added for extra flavor). Cook until the tomatoes break down into a saucy consistency, then pour in hot water and braise for 2.5 hours.
Before serving, season with sugar and salt to taste, and add a dash of chicken bouillon. Turn off the heat and garnish with cilantro.
