| Ingredient | Amount |
|---|---|
| chicken (leg or whole) | half |
| light soy sauce | 2 as needed |
| Shaoxing wine | 2 as needed |
| ginger | appropriate |
| Sichuan peppercorns | 1 as needed |
| dried chili peppers | 1 as needed |
| salt | 2 as needed |
| garlic | 1 as needed |
| egg | 1 as needed |
| scallions (chopped) | 10 as needed |
| white pepper | 1/2 |
| chili powder | 1 as needed |

Prepare chicken leg meat, or you can use a whole chicken. This time I only used a portion.

Cut the chicken into small pieces. Prepare a bowl of dried chili peppers, cut scallions into small segments, slice the ginger, peel one bulb of garlic, and set aside a small pinch of Sichuan peppercorns.

Add one egg, 2 tbsp light soy sauce, 2 tbsp Shaoxing wine, 1/2 tsp white pepper, 1 tbsp chili powder, and a small tsp of salt to the chicken pieces. Mix well.

Add half a bowl of cornstarch and stir until evenly coated. Marinate for 30 minutes.

Heat oil in a wok to medium (about 150-160°C). Add the chicken pieces and deep-fry until golden. Remove, then reheat the oil and fry the chicken again for another 30 seconds for extra crispiness.

Remove and drain the oil. If you prefer a darker color, you can add an extra tablespoon of dark soy sauce!

Leave a thin layer of oil in the wok. Add dried chili peppers, Sichuan peppercorns, ginger slices, garlic, and the white parts of the scallions. Stir-fry over low heat until fragrant.

Add the fried chicken pieces back in and toss quickly to coat evenly.

Finally, sprinkle with chopped scallions and white sesame seeds. Ready to serve!

Delicious stir-fried spicy chicken is done!
