Cooking StepsHow to cook Pan-Seared Salmon step by step

  1. Pan-Seared Salmon
    Step 1

    Cut the salmon into portions, sprinkle with a little salt and let it sit for a while.

  2. Pan-Seared Salmon

    Use a cast iron pan to sear — very convenient. Do NOT add oil, do NOT add oil, do NOT add oil! The salmon will release plenty of its own oil. (The oil in the photo is from when I pan-seared salmon that morning — the fish releases a lot of oil.) Start with the skin side down first, then flip to sear the flesh side.

  3. Pan-Seared Salmon
    Step 3

    No need to flip too often. Once you see plenty of oil being released, flip to the other side. Sear over low heat — when the flesh turns a deeper color, it’s about done.

  4. Pan-Seared Salmon

    Cut some lemon and squeeze the juice over the seared salmon. Done!

    Used the oil rendered from the salmon to make vegetable pancakes.
