A delicious Crispy Deep-Fried Capelin recipe.
Add scallion, ginger, Sichuan peppercorn, salt, white pepper, and cooking wine. Toss evenly and marinate for 30 minutes.
Combine 4 tablespoons flour and 3 tablespoons cornstarch. Gradually add beer in small amounts, stirring until the batter reaches a yogurt-like consistency. Add a little cooking oil and mix well.
Deep fry at medium heat (about 160°C/320°F) until the fish holds its shape, then remove. Raise oil temperature to high (about 190°C/375°F) and fry again until golden and crispy on the outside. Remove and drain.
Tip for cleaning: Make a small cut at the gill area and pull — the innards will come out in one piece.
