A delicious Spicy Sichuan Chicken (Laziji) recipe.


Cut chicken drumstick meat into small pieces and marinate for about 1 hour. Marinade: 2 swirls of cooking wine, 2 swirls of light soy sauce, half a swirl of dark soy sauce, 5 slices of ginger, Sichuan pepper powder to taste, and 2 spoonfuls of salt.

Heat oil and add the chicken pieces. Deep-fry on high heat until crispy, about 10 minutes. Note: 1. The recipe uses an induction cooktop at 2100W; if using gas, turn to high heat. Toss the chicken during frying to prevent sticking. 2. Use enough oil to submerge the chicken.



Leave a thin layer of oil in the wok. Add Sichuan peppercorns, garlic slices, and dried chili segments. Stir-fry on low heat until fragrant. Do not use high heat or the chilies will burn and turn bitter.

Add the fried chicken pieces back in along with sugar and stir-fry. Taste and adjust seasoning with a pinch of salt if needed. Sprinkle white sesame seeds just before serving!
