Slice the onion into strips. To avoid tearing up, frequently dip your knife in water while cutting.
Marinate the beef with salt, black pepper, and light soy sauce for 10 minutes.
Prepare the aromatics: ginger, garlic, chili, and scallions.
Heat a generous amount of oil in the wok.
Add the beef along with the ginger, garlic, and chili to the wok.
Stir-fry for about one minute until the beef changes color.
Add the onion and stir-fry for one minute.
