A delicious Dill Pickle, Beef & Cheese Bagel recipe.


Mix at low speed until a dough forms, then switch to medium-high speed and knead until 90% gluten development.



Divide the dough into 6 equal portions, roll into balls, cover with plastic wrap and rest for 20 minutes.




Flatten one end of the dough with a rolling pin, wrap the other end over it, and pinch to seal the seam — forming the bagel ring.

Repeat for all portions. Place each on parchment paper and proof at 33°C for about 30 minutes.


In a pot, combine water and sugar, stir well, and bring to a boil over high heat. Reduce to low heat, then boil the bagels — about 20 seconds per side.



Bake in a preheated oven at 230°C top heat / 200°C bottom heat for about 15 minutes. Oven temperatures vary, so adjust accordingly.
