| Pork belly | 50 as needed |
| Scallion | 1 as needed |

| Glass noodles (sweet potato) | 30-50 |

| Soy sauce | |
| Salt | |
| Sugar |

Rinse the pickled cabbage 2-3 times. If you prefer a more sour taste, rinse only twice. Prepare all ingredients as shown.

Add pork belly to the wok and stir-fry until the fat renders out.

Add ginger strips and half of the scallion, stir until fragrant. Add light soy sauce to season and add color.

Add the pickled cabbage and stir-fry evenly.

Add soy sauce and sugar, stir-fry evenly. My cabbage was quite sour, so I added about 20g of white sugar.

Pour in a large bowl of water and bring to a boil.

Add the other half of the scallion and half of the red chili pepper. Cover and simmer for 5 minutes.

Chop some scallion greens. Take 30g of sweet potato glass noodles.

Add the glass noodles to the pot. Add more water if needed.

In about 3 minutes, the glass noodles will soften and turn translucent.

Finally, scatter the scallion greens and remaining red chili pepper on top, cook for 1-2 more minutes, then turn off the heat.
