| red chili pepper | 1 as needed |
| oyster sauce | 1 as needed |

500g of pre-marinated snakehead fish fillets.

Add cooking wine to a pot of water. When boiling, add the fish slices and blanch until just cooked through.

Drain well and set aside.

Mince the garlic, deseed and mince the red chili pepper, and finely chop the scallion whites. Heat a little oil in a pan and stir-fry until fragrant.

Add 2 tablespoons light soy sauce, 1 tablespoon oyster sauce, ½ tablespoon vinegar, and salt to taste. Stir, then add 3–4 tablespoons of water and bring to a simmer.

Add the fish slices and chopped scallion, gently toss to coat evenly.
