A delicious Braised Beef with Potatoes and Tomatoes recipe.

Cut the beef into cubes. Soak in cold water for one hour to draw out the blood, then rinse clean.

Place the beef in a pot with cold water. Bring to a boil and skim off the foam. Simmer over medium heat for 10 minutes.

Remove the beef and drain. Do not discard the cooking liquid — let it sit so the sediment settles to the bottom.

Add scallion, ginger, garlic, chili peppers, Sichuan peppercorns, star anise, doubanjiang, light and dark soy sauce, and seasoning soy sauce to the pressure cooker.



Pour the reserved beef broth into the pressure cooker, being careful not to pour in the sediment from the bottom. Bring to pressure over medium heat and cook for 10 minutes.

Add the cubed potatoes and tomatoes to the pot. Season with salt. Cover and bring back to pressure, then cook for 5 minutes. Adjust time to your preferred tenderness — this timing yields tender but not mushy beef. Always release pressure before opening the lid — safety first!
