    Peel and dice the onion and potato. Briefly blanch the beef slices in boiling water to remove any scum, then drain and set aside. Cook rice in a rice cooker ahead of time.

    Mix the sauce: in a small bowl, combine light soy sauce, oyster sauce, black pepper, dark soy sauce, cooking wine, and a pinch of salt. Stir well and set aside. Pour in enough water to cover the potato and onion, bring to a boil over high heat, then reduce to medium-low and simmer for about 10 minutes until the potato is tender. Add the blanched beef slices and the prepared sauce, stir-fry everything together, then increase the heat to reduce the sauce until thickened.
