  1. Steamed Mandarin Fish
    Step 1 Detail

    Have the fish cleaned at the market. Rinse it at home, then make a few diagonal slashes on both sides of the fish and lightly score near the fins (this helps the fish cook evenly). Slice the ginger and scallion whites, place them on the bottom of the steaming plate and stuff some into the fish cavity. Brush both sides of the fish with oil (to keep the flesh moist and lock in flavor).

  2. Step 2 Detail

    Once the water is boiling, place the fish in the steamer and steam for 15 minutes. While steaming, cut some scallion greens into thin julienne strips and soak them in water (so the scallion flavor doesn’t overpower the fish). Optionally, julienne some pickled chilies or bird’s eye chilies for garnish.

  3. Step 3 Detail

    When the fish is nearly done, heat a small pan of oil over low heat. Once the fish is cooked, remove it from the steamer and pour off the accumulated liquid in the plate. When the oil is hot, you may add scallion bits and/or Sichuan peppercorns. Arrange the scallion juliennes over the fish, drizzle the hot oil evenly over the top, then pour steamed fish soy sauce (or light soy sauce) over the fish. Serve immediately.
