Season the red snapper fillets with salt, cooking wine, and white pepper. Spread evenly, top with ginger slices, and marinate for 10 minutes.

Steam at 100°C for 20 minutes using a combi steamer. Make sure the water tank is filled before starting.

Discard the steaming liquid, remove the ginger slices, then top with julienned peppers and scallions. Drizzle with hot oil and steamed fish soy sauce.
