A delicious Braised Eel with Cucumber recipe.
Heat oil in a wok until smoking hot. Add a small amount of lard and fry the ginger. Add the eel — you can season with a pinch of salt early on. Add a little more lard as needed and stir-fry until the eel is cooked through. Add smashed garlic and dried chilies, stir briefly. Add the cucumber and toss for a moment. Pour in water just enough to reach the level of the eel. Season with chicken bouillon and a splash of light soy sauce. Finish by tossing in the perilla leaves just before serving.
