A delicious Chaoshan-Style Abalone with Puning Soybean Paste recipe.
Clean the abalones thoroughly. Scrub the shells and remove the内脏. Score the abalone meat lightly in a crosshatch pattern.
Place the abalones on a heatproof plate. Spread a thin layer of Puning soybean paste over each abalone.
Steam over high heat for 8-10 minutes, until the abalone is just cooked through and tender.
Transfer to a serving dish, garnish with finely chopped scallions and drizzle with the steaming juices. Serve immediately.
