A delicious Tomato Braised Basa Fish recipe.

Slice the basa fish into pieces. Marinate with black pepper and cooking wine for 20 minutes. Score the tomatoes with a cross, blanch in hot water to peel, then dice. Prepare your favorite vegetables.

Heat oil in a pan, add the diced tomatoes and a pinch of salt to draw out the juices. Add tomato paste and cook down.

Once it forms a sauce, add soy sauce and sugar. Add the fish fillets and simmer gently over low heat for about 10 minutes. (Vegetables can be blanched separately or added directly to cook.)

Taste and adjust seasoning — add more salt, soy sauce, or sugar as needed. Once the flavor is right, increase heat to reduce the sauce.

Arrange vegetables on a plate, pour the tomato fish over them, and garnish with scallions and sesame seeds. Serve with rice — it’s delicious!
