A delicious Bitter Gourd Stir-fried with Beef recipe.

Slice the beef, then marinate with light soy sauce, sliced ginger, and cornstarch — mix well and set aside. Slice the bitter gourd. Bring a pot of water to a boil, add a splash of oil, salt, and cooking wine, then blanch the bitter gourd slices until just cooked. (For a lighter flavour, you can skip the blanching and let the bitter gourd stir-fry in the next step to absorb more seasoning.)

Heat the wok, then add cold oil. Slide in the marinated beef and stir-fry until just set. Add the blanched bitter gourd and toss quickly. Season with sugar and salt, stir-fry over high heat until evenly coated, and serve immediately.
