A delicious Stir-fried Beef with Celery and Chilies recipe.

Slice the beef and marinate with oyster sauce, dark soy sauce, beer, salt, white pepper, and cornstarch. Mix vigorously until well-coated, then drizzle in cooking oil and stir to combine. Set aside.

Prep the aromatics: finely chop bird’s eye chilies, pickled wild chilies, and medium-hot red chilies. Mince the garlic. Cut the celery into pieces (edamame also works as an alternative).

Heat oil in a wok over medium heat. Add the marinated beef and spread it out. As soon as it starts to change color (about 60-70% done), remove and drain. The beef will finish cooking later.

Heat fresh oil in the wok. Add garlic, bird’s eye chilies, pickled wild chilies, and chopped red chilies with a pinch of salt. Stir-fry until fragrant. Add oyster sauce, light soy sauce, a splash of rice wine (or fermented glutinous rice wine), chicken bouillon, MSG, and celery. Toss until aromatic.

Return the beef to the wok. Stir-fry over high heat for about 10 seconds, then serve immediately. Your tender and aromatic stir-fried beef is ready!
