A delicious Beef Quesadilla with Fresh Tomato Salsa recipe.
Melt 2.5g butter in a non-stick pan over low heat. Add diced onion and stir-fry over medium heat for 2.5 minutes until translucent. Add minced garlic and stir-fry for 20 seconds.

Add ground beef and quickly break it up with a spatula. Season with 0.5g salt, 3g light soy sauce, 0.5g black pepper, and 0.5g paprika. Stir-fry until just cooked through — do not overcook. Set aside to cool for 5 minutes.
Assembly: Lay one tortilla flat. Sprinkle half the mozzarella on top, spread all the beef filling evenly, then sprinkle the remaining cheese over it (a little cheese around the edges helps seal the tortilla). Place the second tortilla on top and press gently.
Cooking: Spray a non-stick pan with 1–2 spritzes of oil. Place the quesadilla in the pan over low heat, cover, and cook for 2 minutes. Flip, press gently with a spatula, and cook uncovered for 2 minutes, then another 30 seconds to 1 minute.
Tomato Salsa: Combine diced tomato (80g), diced onion (15g), a pinch of salt (0.2g), 3g lemon juice, and a tiny pinch of sugar. Mix well and refrigerate for 10 minutes before serving.
