A delicious Tomato Beef and Soft Tofu Clay Pot (Single Serving) recipe.
Prep the ingredients: slice the beef tenderloin into thin pieces, mince the garlic, and dice the tomatoes. You can leave larger chunks if you prefer.
Marinate the beef: combine with ½ tbsp light soy sauce, a small dab of oyster sauce, ½ tbsp cornstarch, and a drizzle of oil. Mix well.
Heat oil in a pot and stir-fry the minced garlic and chili sauce until fragrant. Add the diced tomatoes and cook until they release their juices. Add one piece of rock sugar. Once the tomato sauce thickens and starts bubbling, pour in hot water to taste.
Let the tomato broth simmer for about a minute, then gently slide in the whole block of silken tofu — try not to break it apart. Lay the marinated beef slices on top of the tofu, cover with a lid, and simmer for 1 minute. Done!
