  1. Wash the mushrooms and quarter them (as shown). Cut the chicken breast into small pieces.
  2. Season the chicken with salt, a little dark soy sauce (for color), light soy sauce, oyster sauce, sugar, pepper, cooking wine, and cornstarch. Mix well, then add a spoonful of cooking oil to seal in moisture. Marinate for about 20 minutes. Adjust seasoning amounts to your taste — less if you prefer mild, more if you like it bold.
  3. Heat oil in a wok and add the marinated chicken.
  4. Stir-fry quickly over high heat until the chicken changes color, then remove and set aside.
  5. Heat oil in the wok and add the garlic cloves. Fry until slightly golden and fragrant.
