Scallion Stir-fried Pork Belly
Ingredients
- 250g pork belly
- 1 scallion (large)
- 3 garlic
- 2 light soy sauce
- 0.5 dark soy sauce
- a pinch sugar
- a pinch chicken bouillon
- a splash cooking wine
Instructions
- Prep: Remove skin from pork belly and slice thinly. Cut scallion diagonally into segments. Mince garlic.
- Add pork belly to a cold wok and render out the fat over medium heat until lightly golden and crisp. If there is too much rendered fat, pour off the excess.
- Splash cooking wine around the edge of the wok. Add minced garlic and stir until fragrant.
- Add half of the scallion and stir-fry until fragrant. Add 2 tbsp light soy sauce, 0.5 tbsp dark soy sauce, a pinch of sugar and chicken bouillon. Toss everything evenly.
- Add the remaining scallion and continue stir-frying. Adding scallion in two batches creates more layered flavor.
- Plate and serve.
