Creamy Crucian Carp Soup

Ingredients

  • 2 Crucian carp
  • 2 Eggs
  • 1 Tofu
  • 1 Scallion
  • 1 Salt
  • 1 White pepper

Instructions

  1. Prepare the ingredients: 2 crucian carp, 2 eggs, 1 block tofu, 1 stalk scallion. (You can also use 1 carp and 1 egg while keeping other ingredients the same.)
  2. Heat a wok with oil over high heat. Crack in 2 eggs and fry until golden on both sides. Remove and set aside. Heat the wok again with oil and sprinkle a small handful of salt into the oil, then add the fish.
  3. Pan-fry the fish until both sides are deeply golden brown — don't worry about it being too brown, since we're making soup. The darker the sear, the whiter the broth will be. Add the fried eggs, cubed tofu, and pour in hot water until the ingredients are just covered. Bring to a boil, then add 1 tbsp white pepper and 1 tbsp salt. Simmer for 10–15 minutes, garnish with chopped scallion, and serve!
