    Step 1

    Clean the hairtail fish thoroughly, cut into sections, and marinate with scallion, ginger, garlic, and cooking wine for at least 20 minutes.

    Place flour on a plate and coat both sides of the fish pieces evenly.

    Heat appropriate amount of oil in a pan, fry the fish on low heat until both sides are golden brown, then remove and set aside.

    In a bowl, mix together 3 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp aromatic vinegar, 1 tbsp cooking wine, 1 tbsp oyster sauce, and 1 tsp sugar (or 3 rock sugar pieces).

    Sauté scallion, ginger, and garlic in a little oil until fragrant.

    Add the spices (star anise, Sichuan pepper, dried chili) and the fried fish.

    Pour in the sauce mixture and toss to coat evenly.
