Colorful Vegetable Fried Rice for Kids

A nutritious and visually appealing fried rice designed to help kids enjoy their vegetables. Packed with corn, peas, and carrots, it is a complete meal in a bowl.

Ingredients

  • 2 cups cooked rice (leftover chilled rice is best)
  • 1/2 cup frozen mixed vegetables (peas, corn, carrots)
  • 2 eggs, lightly beaten
  • 1/2 tsp salt
  • 1 tbsp light soy sauce
  • 2 tbsp vegetable oil

Instructions

  1. Break up any large clumps of rice.
  2. Heat 1 tbsp oil in a wok. Add beaten eggs and scramble until just set. Remove and set aside.
  3. Add remaining oil to the wok. Sauté the mixed vegetables for 2-3 minutes until heated through.
  4. Add the rice to the wok. Stir-fry on high heat for 3-5 minutes, pressing down to separate grains.
  5. Add soy sauce and salt. Toss until the rice is evenly colored.
  6. Return the eggs to the wok, mix well, and serve warm.
