A delicious Air Fryer Roasted Eel recipe.

Blanch the eel briefly in hot water to remove the surface slime. Scrape off the slime, then use a knife to separate the flesh from the backbone. Cut the eel meat into small segments.
Make the marinade: combine 2 tablespoons light soy sauce, 2 tablespoons oyster sauce, 1 tablespoon dark soy sauce, 1 tablespoon white liquor (other spirits work too, but white liquor is preferred), 1-2 tablespoons honey, and white sugar to taste. Add more sugar if you like a sweeter flavor — the sweetness rounds out the overall taste, so don’t skip it entirely.
Toss the eel segments with the marinade until evenly coated. Marinate for 30 minutes. If the weather is hot, refrigerate during marinating.
Place the eel in the air fryer and cook at 180°C (356°F) for 8 minutes. Flip the pieces over and cook for another 8 minutes. Serve immediately.
