Slice the beef and marinate with 1 tbsp light soy sauce, 1 tbsp oyster sauce, and 1 tbsp starch. Mix well, then add 1 tbsp cooking oil and mix again. Marinate for 15 minutes. Heat oil until hot, add beef and quickly stir-fry until color changes. Add green and red peppers, then add bamboo shoots and continue stir-frying for 1-2 minutes. Season with 1 tbsp light soy sauce, half tbsp dark soy sauce, and 1 tbsp oyster sauce. Toss a few times and serve.

The beef is tender and absolutely delicious!

Add chili oil or chili crisp to taste, or include dried red chilies during cooking. A dash of Sichuan peppercorn adds a different kind of heat.
