Button Mushrooms with Chicken Breast
Ingredients
- 1 chicken breast
- 1 small box button mushrooms
- 1-2 garlic
- 1 small handful chopped scallions
Instructions
- Wash the mushrooms and quarter them (as shown). Cut the chicken breast into small pieces.
- Season the chicken with salt, a little dark soy sauce (for color), light soy sauce, oyster sauce, sugar, pepper, cooking wine, and cornstarch. Mix well, then add a spoonful of cooking oil to seal in moisture. Marinate for about 20 minutes. Adjust seasoning amounts to your taste — less if you prefer mild, more if you like it bold.
- Heat oil in a wok and add the marinated chicken.
- Stir-fry quickly over high heat until the chicken changes color, then remove and set aside.
- Heat oil in the wok and add the garlic cloves. Fry until slightly golden and fragrant.
- Add the quartered mushrooms.
- Stir-fry until the mushrooms are cooked and softened.
- Add the cooked chicken breast back to the wok.
- Stir-fry everything together and taste for seasoning. If it needs more flavor, add a little light soy sauce and oyster sauce, then stir until well combined.
- Finally, sprinkle with chopped scallions and serve!
