    Wash the chives thoroughly. Grind the pork into minced meat. Soak Sichuan peppercorns in warm water to make the peppercorn water. Prepare the seasoned oil by frying Sichuan peppercorn, scallion, ginger, cilantro, and onion in oil until fragrant, then strain. Place the minced pork in a bowl, add all the seasonings and mix well. Gradually add the scallion-ginger water in 3 batches, mixing thoroughly each time to let the meat absorb the liquid. Drizzle in the seasoned oil and mix. Finally, add the chopped chives and minced scallion and ginger, mix everything together, and start wrapping the dumplings. Note: This recipe is slightly salty — you may want to reduce the salt to taste. The chives can be a bit pungent; draining or lightly salting them before adding to the filling yields a better result. Overall, these dumplings are far better than store-bought ones!
