A delicious Deep-Fried Toothpick Beef recipe.

Wash the beef and cut into thin strips. Add 1.5 tbsp light soy sauce, 0.5 tbsp dark soy sauce, 1 tbsp cooking wine, 1 tbsp oyster sauce, and 2 tbsp soybean oil (all using a standard tablespoon). Then add 5g white pepper powder, 5g thirteen-spice powder, 5g salt, 3g white sugar, and 2 slices ginger cut into julienned strips. Mix well and marinate for 1 hour. Thread the beef strips onto toothpicks.

Pour oil into a small wok or pot — use plenty, enough to fully submerge the toothpick beef. (The leftover oil can be reused for stir-fries or braised dishes.) Wait until the oil is very hot before adding the beef. (Test by dropping in one piece — it should sizzle vigorously with bubbles all around.) Fry until the beef turns a deep brown color, similar to grilled lamb skewers, then remove. This takes about 10-plus minutes. Start with high heat for the first 2 minutes, then switch to medium heat and fry slowly.

Heat a small amount of oil in a separate pan. Add the fried toothpick beef and toss, then add BBQ seasoning mix and white sesame seeds. Stir-fry everything together, then transfer to a serving plate.

Pay close attention to the oil temperature — if you’re worried the beef isn’t fully cooked through, take one out and taste it first. This recipe is so good you’ll be licking your fingers!
