A delicious Beef Chili Sauce recipe.
Heat peanut oil with washed and dried bay leaves, star anise, cassia bark, scallion whites, cilantro stems, and purple onion to make seasoned oil.

Wash Guizhou Luosijiao chilies, cut into small segments, and dry them. Fry in the seasoned oil in batches until they change color, then remove and let cool.

Once cooled, add a generous amount of toasted white sesame seeds (the more the better — incredibly fragrant), salt, and Sichuan pepper powder. Mix and crush by hand.

After frying the chilies, turn off the heat. Add minced dried shallots, rehydrated dried shiitake mushroom, and Sam’s Club beef patties. Break up the beef patties with a spatula, then turn the heat back on and simmer.

Season the beef mixture with oyster sauce, light soy sauce, salt, sugar, and mushroom seasoning. Once cooked through, turn off the heat and mix in the crushed chili mixture. Pack into clean, dry glass jars while still hot for storage.
