Taste & Role
🍯 Sweet☕ Bitter
In the kitchen it functions like a medicinal herb: simmered into detox-style soups (often with crucian carp, pork ribs, or dates), steeped as a spring tonic tea, or steamed with flour and dressed with garlic oil as a rustic seasonal dish.
What it is
Capillary wormwood, known in Chinese as Yin Chen, is the dried young spring shoots of Artemisia capillaris, a feathery herb in the daisy family. It is best known as a traditional Chinese medicinal herb used to cool "damp heat" and support the liver, but the tender young greens are also eaten as a seasonal spring vegetable in parts of northern China.
