What it is
Chinese red vinegar is a light, mellow vinegar traditionally brewed from glutinous rice, often with the addition of red yeast rice, which gives it a pale reddish-amber color. It is noticeably softer and less intense than Chinese black vinegar, with a gentler acidity. Bottles may be labeled red rice vinegar or Zhejiang red vinegar.
