In Chinese cooking, crucian carp is best known as the base of milky crucian carp and tofu soup, where the whole fish is pan-fried and then simmered to create a creamy white broth. It is also braised whole with soy sauce, ginger, and scallions, or lightly fried and served with rice.
What it is
Crucian carp is a small freshwater fish in the carp family, widely farmed and eaten throughout China. It usually runs six to twelve inches long, with tender, fine-flaked flesh and many small bones. Because of those bones, it is typically cooked whole rather than filleted.
