Taste & Role
Cold appetizer and congee topping.
What it is
Century eggs are duck eggs preserved in clay and ash until the white turns amber-jelly and the yolk turns deep green-cream. Sliced with cold tofu and soy, they make the famous appetizer; chopped into congee they add richness. The ammonia scent fades once sliced.
