Ground chile
辣椒粉· la jiao fen
spice
Taste & Role
Builds heat and color throughout Sichuan, Hunan, and northern Chinese cooking. It is the base for homemade chili oil, gets sprinkled over noodles and hot pot dipping sauces, and seasons mapo tofu, dry-fried dishes, and spice rubs.
What it is
A pure ground chili powder made from dried red chilies, typically finer and more vividly red than the American spice-aisle version. Unlike US chili powder, which is a seasoned blend with cumin, oregano, and garlic, the Chinese style contains only ground chilies. It comes in a range of grinds and heat levels, from fine powder to coarse flakes.
