What it is

Chinese ham is a dry-cured pork leg, most famously Jinhua ham from Zhejiang province, that is salted and aged for months until dense and deeply flavored. Unlike Italian prosciutto or Spanish jamon, it is saltier and almost always cooked rather than eaten raw. Yunnan and Xuanwei hams are other well-known regional varieties.
