What it is
Peanut oil is a cooking oil pressed from peanuts and has long been the default frying oil in Chinese kitchens. Refined versions are light golden, nearly flavorless, and have a high smoke point around 450°F, while unrefined "fragrant" versions are pressed from roasted peanuts. It is sold in both styles, usually clearly labeled on the bottle.
