Shaoxing wine is Chinese cooking's dry sherry. Added around the protein, it lifts the browned bits off the wok into the sauce and rounds out soy and ginger. Skip brands labeled 'cooking wine' with added salt if you can — real Shaoxing (Pagoda brand is everywhere) tastes better and you control the salt.
