They are also the source of the starch used to make Chinese glass noodles.
What it is
Sweet potato is a starchy root vegetable with tapered ends and thin skin ranging from reddish-brown to pale yellow, hiding sweet flesh that can be orange, yellow, or white. In China it is a beloved everyday staple, enjoyed everywhere from street carts to home kitchens. Note that many American supermarkets label orange-fleshed sweet potatoes as "yams," but they are the same vegetable.
