What it is
Wood ear mushroom is an edible fungus that grows on tree trunks and branches, named for its dark brown to black, ear-like shape. It is typically sold dried and must be rehydrated in warm water before use, expanding to several times its size. Once rehydrated, it has a distinctive slippery, gelatinous surface and a pleasantly crunchy bite.
