Seasonal Crab Meat Rice (with a Full Picking Tutorial)
蟹肉饭 · jiangsu cuisine · Jiangsu
Autumn in Suzhou means hairy crab. The classic way to eat Yangcheng Lake or Taihu hairy crab is steamed with a splash of crab vinegar, but this recipe turns the picked meat into a satisfying rice bowl. Only chopsticks and scissors are needed to pick the crabs, and leftover crab meat can be sealed and saved for crab noodles, scrambled eggs, or soup dumplings. The author used four crabs (three male, one female), about 150-200 g (3-4 liang) each, for two people.

Steps
- 1
Step 1

Scrub the hairy crabs clean with a brush. Leftover picked crab meat keeps well sealed in the refrigerator and can later be used for crab noodles, crab scrambled eggs, or crab xiaolongbao.
✅ Done when: The crab shells are free of visible dirt after a thorough scrubbing.

Steam the crabs belly-up, with a slice of ginger on each one; if you have perilla leaves, tuck a few underneath to help counteract the crab's cooling nature. Steam for 15 minutes after the water comes to a boil.
✅ Done when: The crabs have steamed for 15 minutes once the water is boiling.

Step 3

Finely mince the remaining ginger, add a few spoonfuls of sugar, and pour in aged vinegar. Stir with chopsticks and taste, adjusting until it suits you. The author usually sets the sauce bowl in the steamer with the crabs so it warms through and tastes better.
✅ Done when: The sugar has dissolved and the sauce tastes balanced to your liking.
- 4
Step 4

Let the steamed crabs cool slightly before picking.
✅ Done when: The crabs are cool enough to handle comfortably.
- 5
Step 5

Twist off all the legs first, then lift off the top shell and remove the mouth, stomach, heart, and gills. Everything remaining is edible.
✅ Done when: Only the edible body meat and roe remain, with all inedible parts removed.
- 6
Step 6

The top shell is the easiest: simply pick out the roe. On the body, remove the roe, break the shell in half, then cut each half along the cross-section, and run a chopstick along the inside of the shell to lift the meat out cleanly.
✅ Done when: The body shells are emptied of all their meat and roe.
- 7
Step 7

Snip off both ends of each leg and push a chopstick through the shell to push out the leg meat in one intact piece.
✅ Done when: A whole piece of leg meat slides out of each shell.
- 8
Step 845 min

This is all the meat from the four crabs. Washing, steaming, and picking took about 45 minutes with two people working, and the meat was enough for two servings of rice.
✅ Done when: All the crab meat is picked and collected, about 45 minutes of total work.

Heat oil in a skillet — a bit more than you would use for a usual stir-fry, scaled to the amount of crab meat (more if you plan to store it). Add the crab meat and fry to release the golden crab butter, about 2 minutes, until the color turns golden. Add a small pinch of salt and remove from the heat.
✅ Done when: The crab meat has turned a golden color, about 2 minutes in.
- 10
Step 10

The finished fried crab meat should show a layer of golden crab butter at the bottom of the bowl; if storing it sealed, there should be even more oil.
✅ Done when: A visible layer of golden crab butter pools at the bottom of the bowl.
- 11
Step 11

Cook a pot of rice, spoon some crab meat over it, and drizzle with the crab vinegar sauce made earlier.
✅ Done when: The rice is hot and fluffed, topped with crab meat and sauce.
- 12
Step 125 min

Stir everything together so the whole bowl turns golden with crab meat in every bite. The author finishes a big bowl in about 5 minutes.
✅ Done when: The rice is evenly golden and the crab meat is distributed throughout the bowl.
