Stir-Fried Edamame with Dried Tofu and Ground Pork

毛豆炒香干|家常小炒 · pan chinese cuisine

20 min total10 min cooking3 stepssavory

A homestyle Chinese stir-fry pairing tender edamame with chewy dried tofu (xiang gan) and ground pork. The author notes it is especially good with rice; if cooking for children who cannot handle heat, the fresh chilies can be omitted.

Steps

  1. 1

    Step 1

Stir-Fried Edamame with Dried Tofu — step 1 visual checkpoint.

Make the sauce: in a bowl, stir together the light soy sauce, dark soy sauce, oyster sauce, a pinch of salt and sugar, and the water. Set aside.

✅ Done when: The sauce is done when the salt and sugar have fully dissolved and the mixture is uniform.

  2. Stir-Fried Edamame with Dried Tofu — step 2 visual checkpoint.

Bring a pot of water to a boil. Blanch the edamame for 2 minutes, then add the dried tofu and blanch for 30 seconds more. Drain well and set aside.

✅ Done when: Done after 2 minutes for the edamame and 30 seconds for the tofu, with both well drained.

  3. Stir-Fried Edamame with Dried Tofu — step 3 visual checkpoint.

Heat oil in a wok. Add the ground pork and stir-fry until it changes color, then add the rice wine to remove gaminess and add aroma. Add the garlic cloves and bird's eye chilies, stirring until fragrant. Pour in the sauce and cook until it thickens, then add the blanched edamame and dried tofu and stir-fry for 1 minute. Add the garlic greens at the end and serve.

✅ Done when: The pork is no longer pink, the sauce coats the ingredients thickly, and the edamame and tofu have been tossed for 1 minute.
