Steps

Rinse the watermelon rind well. When cutting, leave a little of the red flesh attached to add sweetness, and peel off the dark green outer skin. Sprinkle with salt and let it sit for 20 to 30 minutes to soften and draw out moisture.
✅ Done when: The rind feels softer to the touch and liquid has pooled in the bowl after 20 to 30 minutes of salting.

Make the dressing: combine 2 bird's eye chilies, garlic, 2 tablespoons of light soy sauce, 2 tablespoons of apple cider vinegar, 3 tablespoons of water, 1 tablespoon of sesame oil, and 1 teaspoon of sugar.
✅ Done when: The dressing is fully combined with the sugar dissolved and no visible separation.

Gently squeeze the excess water out of the rind, pour the dressing over it, and toss until evenly coated.
✅ Done when: Every piece of rind is evenly coated with the dressing with no liquid pooling at the bottom of the bowl.
