  • 20 Carp
  • large amount Dried chili peppers
  • large amount Garlic
  • 100 Soy sauce
  • 200 Rice vinegar
  • 200 Steamed fish soy sauce
  • 2000 Oyster sauce
  • 1000 Aged vinegar
  • 200 Chicken bouillon powder
  • 200 MSG
  • 1200 White sugar
  • a pinch Black pepper powder
  • a dash Sesame oil
  • a little (for blooming chilies) Blended cooking oil

Instructions

  1. This is the quantity for 20 fish. Clean and gut the carp, then boil in water for 8 minutes. Remove from the water. Combine all seasonings (except garlic and chili peppers) into a sauce mixture and pour it over the fish. Top with minced garlic and dried chili peppers (soak the dried chilies in water for a few minutes first). Heat oil in a wok until smoking, turn off the heat, add the soaked dried chilies, then pour the hot oil over the fish. Garnish with cilantro. (Personal recipe collection.)
