This is the quantity for 20 fish. Clean and gut the carp, then boil in water for 8 minutes. Remove from the water. Combine all seasonings (except garlic and chili peppers) into a sauce mixture and pour it over the fish. Top with minced garlic and dried chili peppers (soak the dried chilies in water for a few minutes first). Heat oil in a wok until smoking, turn off the heat, add the soaked dried chilies, then pour the hot oil over the fish. Garnish with cilantro. (Personal recipe collection.)
